I love bite-sized appetizers that are easy to prepare, serve, and eat. This recipe takes about ten minutes from start to finish, and can easily be scaled up or down according to your preference. I’ve added jalapenos to the version below, which can be omitted if you prefer less heat.The following recipe makes about 18-20-bite sized sandwiches
Ingredients
3extra-large flour tortillas
¼cupcream cheese
2Tbspsour cream
1jalapeno(seeds removed, remainder finely minced)
4scallions(sliced finely)
¼tspfreshly-ground black pepper
¼tspred pepper flakes
¼tspKosher salt
6slicescheddar cheese
12thin slices of deli-style ham
½cupprepared salsa(for dipping)
Instructions
Lay the tortillas out on your tortilla assembly and rolling surface.
In a medium-sized mixing bowl, mix together the cream cheese, sour cream, jalapeno, scallions, fresh black pepper, red pepper flakes, and Kosher salt.
Spread the mixture in a thin layer onto the tortillas.
Top with two slices of cheddar cheese per tortilla.
Add four thin slices of ham to each tortilla.
Tightly roll the tortillas, and add six or seven toothpick skewers to each tortilla to keep the individual slices together.
Slice the rolled tortilla into roughly 6-7 pieces per tortilla.
Serve with prepared salsa, for dipping, along with extra napkins.
Notes
These can be made an hour or two in advance or serving, just make sure you keep the sandwiches covered with plastic wrap in the refrigerator.
