Pork Lettuce Wraps

There are always ways of taking basic meat and making it a meal without the resulting fare being heavy. Lettuce wraps are the ideal vehicle for many mixes. They’re light; they turn everything into finger food and provide a satisfying crunch.
If you find the wraps aren’t quite enough to fill up tummies, pair them up with things like:
Air-fried crispy beans,
Avocado fries,
Cranberry-orange relish,
Cucumber salad,
Egg rolls,
Greek salad,
Low Mein,
Roasted broccoli,
Shrimp pasta,
Slaw,
Tempura sweet potatoes

Ingredients

  • 1 lb pork tenderloin
  • ¾ tsp fresh ground salt
  • ¼ c Thai chili sauce
  • 1 tsp grated garlic
  • 2 tbsp orange blossom honey
  • 1 tbsp sesame oil
  • tsp fresh grated ginger
  • 1 tbsp seasoned rice vinegar (or apple cider vinegar)
  • Large romaine lettuce leaves
  • Thinly sliced cucumber
  • Chopped green onion
  • Cooked rice

Instructions 

  • Slice the pork loin in half and season it evenly with salt
  • Mix chili sauce with garlic, honey, oil, ginger, and vinegar together
  • Brush some sauce on both sides of the loin. Set the rest aside for serving.
  • Spray the basket of the air fryer with cooking oil
  • Put the pork inside and cook at 350F for about 17 minutes
  • Check the pork. It should read 140F in the thickest part of the meat
  • Remove from the fryer and rest for 15 minutes
  • Slice thinly
  • Lay out several lettuce leaves
  • Using a pastry brush, treat each with the chili sauce mixture
  • Lay a piece of pork in each, followed by cucumbers, green onions, and a little rice
  • Remember, you want to be able to pick these up, so don’t over-fill them
  • If the mix is too dry, add hoisin sauce to the rice.
