This classic combination of earthy goat cheese, smoky bacon, and sweet dates goes wonderfully when served on top of crostini or thicker crackers. I add an extra drizzle of honey on top, because I love the extra sweetness.For this recipe I am using Triscuit crackers, although you can use whatever hearty cracker you like.One thing I love about appetizers like these are that you can arrange the bite-sized crackers on a large serving tray and eat them as finger food.
Drain the fat, and let the cooked bacon rest on paper towels.
When you are ready to assemble your bites, spread some soft goat cheese over the top of your crackers or crostini of choice.
Add some diced dates, along with some of the sliced, cooked bacon from earlier.
Add some sliced chives on top, in addition to a drizzle of honey.
Serve immediately, with extra napkins!
Notes
I like to serve these bites when the bacon is freshly-cooked and still warm, although you can prepare all of the ingredients in advance and assemble the bites whenever you are ready to serve.
