Goat Cheese, Bacon and Date Bites

This classic combination of earthy goat cheese, smoky bacon, and sweet dates goes wonderfully when served on top of crostini or thicker crackers. I add an extra drizzle of honey on top, because I love the extra sweetness.
For this recipe I am using Triscuit crackers, although you can use whatever hearty cracker you like.
One thing I love about appetizers like these are that you can arrange the bite-sized crackers on a large serving tray and eat them as finger food.

Ingredients

  • 8 oz thick-cut smoky bacon
  • 40 Triscuit crackers
  • 12 oz goat cheese
  • 12 oz dried dates (pitted and cut small dice)
  • 16 chives (very finely sliced, as garnish)
  • 3 Tbsp honey (as garnish)

Instructions 

  • Cut the bacon into thin strips.
  • Cook the bacon in a sauté pan over medium heat until the bacon is crispy.
  • Drain the fat, and let the cooked bacon rest on paper towels.
  • When you are ready to assemble your bites, spread some soft goat cheese over the top of your crackers or crostini of choice.
  • Add some diced dates, along with some of the sliced, cooked bacon from earlier.
  • Add some sliced chives on top, in addition to a drizzle of honey.
  • Serve immediately, with extra napkins!

Notes

I like to serve these bites when the bacon is freshly-cooked and still warm, although you can prepare all of the ingredients in advance and assemble the bites whenever you are ready to serve.
