banana brownie

It’s easy to buy too many bananas. Before you know it they’re fully ripe. Sure, you could make a traditional banana bread. But what about banana brownies? You get all the banana flavor with the texture of a good ol’ browny with a slight fudgy appeal.

Ingredients

  • 1 ¾ c bread flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp salt
  • 2 oz milk chocolate
  • 1 c sugar
  • ½ c butter (softened)
  • 1 large eggs
  • 1 c mashed bananas (or mango, if you prefer)
  • ½ tsp vanilla extract *
  • ¼ c walnuts (chopped)
  • ½ c chips (butterscotch, semisweet, toffy or vanilla)

Instructions 

  • Set your oven to 350F
  • Spray the bottom of a 9x9 pan or use parchment paper to line it
  • Whisk the dry ingredients together
  • Carefully melt the chocolate in the microwave or on the stove
  • Place the butter and sugar into the mixer, watching for it to become fluffy
  • Add the egg, vanilla, and banana, make sure everything is evenly dispersed
  • Incorporate the chocolate thoroughly
  • Blend in the nuts and chips by hand
  • Stir with a spatula to mix in the flour (you don’t want to see any signs of it, but don’t over-stir)
  • Pour into pan, then top with banana slices
  • Bake for 40 minutes. THe top should be crakly and the inside puffy
  • Tap it on the counter. If it deflates a little and it feels soft underneath it’s ready to cool for an hour
  • Sprinkle the banana slices with ½ tsp sugar. Melt the sugar using a kitchen torch. Instant brulee!
