Blueberry & Banana Overnight Oats

It took me a while to try overnight oats after they became more popular during the past few years. I think they are a great idea for breakfast, especially if you are someone who likes to prepare their breakfast the night before and have something that’s quick and ready for right when you wake up.
The variations of this recipe that you can make are endless, although I generally try to include a mixture of fresh fruit, needs, and some seeds. It adds a wonderful boost of protein to start your day, and it’s a breakfast you can feel good about.

Ingredients

  • ½ cup rolled oats
  • ½ cup almond milk
  • ½ cup full-fat Greek yogurt
  • 2 Tbsp honey
  • 1 Tbsp maple syrup
  • 1 banana, (sliced into ¼” sections)
  • ¼ cup fresh blueberries
  • 3 Tbsp slivered almonds
  • 1 Tbsp ground coconut
  • 1 tsp chia seeds
  • ¼ teaspoon ground cinnamon
  • 1 fresh mint leaf, (finely sliced, as garnish)

Instructions 

  • Combine all of the ingredients in a bowl and mix to coat everything evenly.
  • Cover the bowl with plastic wrap and allow to sit in the fridge overnight.
  • The next morning, uncover the bowl and stir in a finely-sliced mint leaf.
  • Enjoy cold.

Notes

Depending on your desired thickness of finished product, you can adjust the quantity of milk and yogurt listed above.
I sometimes will make the base overnight, and add the sliced fresh fruits in the morning.
Adding some prepared granola at the end is also lovely here, and adds some nice crunch.
You can do a similar type of breakfast by reducing the quantity of rolled oats, and increasing the quantity of chia seeds. The chia seeds will soak up the liquid overnight and increase dramatically in size. They are delicious with bananas, blueberries, and all sorts of fruits.
