For the honey syrup, combine the honey and water in a small sauce pot on the stove and warm up.
Whisk to combine.
Pour into a squeeze bottle and store in your fridge for whenever you want to use this for cocktail making or cooking.
When you are ready to assemble the cocktails, combine the Bourbon, freshly-squeezed grapefruit juice and orange juice, and the honey syrup, and mix to combine.
Pour into rocks glasses over ice, and garnish with pineapple chunks and maraschino cherries.
