Ingredients
2cupscooked shredded chicken
1cupshredded Mexican cheese blend
½cupsalsa
¼cupdiced bell pepper
¼teaspooncumin
¼teaspoonchili powder
6medium flour tortillas
1tablespoonoil or melted butter
Sour cream(guacamole, and salsa, for serving)
Instructions
Combine shredded chicken, salsa, bell pepper, cumin, and chili powder in a bowl. Place one tortilla in a lightly oiled skillet over medium heat. Spread chicken filling over half of the tortilla, add cheese, and fold it over. Cook for 2 to 3 minutes per side until the tortilla is crisp and the cheese melts. Repeat with the remaining tortillas. Let the quesadillas rest for two minutes, then cut each one into small triangles.
Notes
Serve warm with sour cream, guacamole, pico de gallo, or extra salsa. Keep the bites warm in a low-temperature oven if serving a large group. Add corn, black beans, or jalapeños to the filling for additional flavor.
