Cobb Salad

Ingredients

  • 1 head Romaine lettuce
  • 6 cups spring greens
  • 6 hard-boiled eggs, (chopped)
  • 2 large tomatoes, (chopped)
  • 1 green pepper, ( sliced)
  • 2 avocados, (peeled, pitted and diced)
  • 2 cups cooked chicken or turkey breast, (diced)
  • 2 cups cheddar cheese, (grated)
  • 1/3 cup bacon bits

Instructions 

  • Combine all ingredients in a large bowl and toss
  • Drizzle with dressing just before serving
  • We suggest the Blue Cheese Dressing that follows

Notes

Use skinless chicken or turkey breast, fat free or low fat cheese and low fat bacon bits
