Coconut Custard Pie

Ingredients

  • 1 cup sugar
  • 2 Tbsp. all-purpose flour
  • 1/2 tsp. salt
  • 3 eggs, beaten
  • 1 cup milk
  • 4 Tbsp. butter, melted
  • 1 cup coconut (shredded)
  • 1 tsp. vanilla extract
  • 1 9-inch deep dish pie crust

Instructions 

  • Preheat oven to 350 degrees.
  • Combine sugar, flour and salt in a bowl.
  • Add eggs, milk, butter, coconut and vanilla and stir until well blended.
  • Pour into piecrust and bake for 45 minutes to 1 hour at 350 degrees until set.

Notes

Use your favorite sugar and egg substitute and low fat milk.
Coconut has lots of fat and calories but, let's face it, you can't have coconut pie without coconut.
