English Muffin with Black Forest Ham, Sliced Apples, Smoked Gouda and Arugula

This epic breakfast sandwich will leave you craving a second one. You can use any sliced ham that you can find at your local deli, and you can use your cheese of preference if you don’t have Gouda.
Personally, I love the sweetness provided by the finely-sliced apples, although these can be omitted if you want a more savory breakfast sandwich. In terms of greens, I enjoy the bitterness of arugula greens, although you can omit if you don’t have these in your fridge.
The following recipe makes one large breakfast sandwich.

Ingredients

  • 1 English muffin (split in half)
  • 2 tsp salted butter (softened)
  • 1 tsp vegetable oil
  • 3 oz finely-sliced ham
  • 2 thin slices of smoked gouda cheese
  • ¼ Honeycrisp apple (cut to order into very fine slices)
  • 2 tsp whole-grain mustard
  • 1 tsp honey
  • A few grinds of fresh black pepper
  • ¼ cup fresh Arugula (washed and dried)

Instructions 

  • Butter your English muffins on both sides with a light coating of softened butter.
  • Griddle the English muffin top and bottoms in a pan on medium heat, to ensure a golden-brown toasting.
  • While the English muffin is toasting, add the vegetable oil to a small sauté pan, and increase the heat to medium-high.
  • Add the finely-sliced ham in a loose, circular-shaped pile.
  • Fry the pile of sliced ham on one side, and then flip and your slices of cheese while you fry on the other side.
  • Cut your section of peeled apple into very fine slices.
  • Butter your toasted English muffin, and add the pan-fried sliced ham with the gouda cheese.
  • Add the finely-sliced apple on top of the fried ham.
  • Mix together the mustard with some honey and some fresh black pepper.
  • Add this honey mustard mixture to the top section of your griddled English muffin.
  • Arrange the fresh Arugula or bitter salad greens of choice on top of the sliced apples.
  • Close the sandwich with the top of the English muffin, and serve.

Notes

As with any breakfast sandwich, this is best eaten fresh, right after sandwich assembly!
