There’s something fun about food you can take with you. At a party, you’re not stuck at the table. You can easily mingle! This fish dish takes a little time to assemble, but the resulting “cod in a pocket” (or haddock) is delicious.
FOR FISH SEASONING
- 1 ½ lbs cod or haddock fillets (this makes enough for 4-6 sandwiches)
- 1 tsp lemon pepper
- 1 tsp ginger
- 1 tsp garlic powder
- 1 tsp smoky paprika
- Sea Salt
- Cracked pepper
- 3 tsp minced garlic
- 2 lemons
FLOUR DREDGE
- 1 c flour
- ½ c cornstarch
- 1 tsp baking soda
- ¼ tsp chipotle powder (optional)
- Frying oil
FOR SERVING
- Tahini sauce
- Cucumber slices
- 1 tomato
- 6 pita pockets
FOR FISH SEASONING
Mix all your dry ingredients.
Incorporate them thoroughly
Pat your fish dry
Apply the seasoning evenly on both sides
Squeeze the juice from the lemons over the top
Refrigerate for 30 minutes.
FLOUR DREDGE
Remove the fish from the refrigerator
Combine the dredge mixture
Pour oil into a skillet until it’s 2” deep
Warm to medium heat (the oil bubbles)
Dredge each piece of fish in flour
Shake off any excess
Fry the filets (don’t crowd them) on each side for 3 minutes
Transfer the fried fillets to paper towels to drain
