When you’re looking for a refreshing side dish, try this Fruited Pasta Salad. It’s bright, bringing a little cheer to the table. Fruit salads not only taste good, but they’re good for you. Some nutrients include iron, potassium, and vitamin B6. Eating one serving of fruit daily reduces your chance of heart disease.
Ingredients
1cupuncooked rotini or bow-tie pasta
1cupfresh strawberries quartered
1cuppineapple tidbits
1cupseedless green grapes(halved)
1cupcubed watermelon(or cantaloup)
1cupblackberries(or raspberries)
2kiwi fruit(peeled and sliced into bite-size pieces)
2tbspslivered almonds(toasted)
INGREDIENTS: DRESSING
1cupvanilla yogurt(or flavored)
½tspgrated lime peel
1tbsplime juice
2tbsporange flower honey
⅔cupfresh orange juice
⅓cuppacked brown sugar
1teaspoonvanilla extract
Instructions
Using the directions on the container, cook the rotini to just over al dente, drain, and rinse with cold water.
Use a strainer to let the water drip out of the rotini.
Put the pasta and all the fruit in a large serving container
Use a small bowl to mix the dressing together
Toss the fruit with the dressing until evenly coated.
Let chill for at least 30 minutes before serving.

Optional additions or substitutions: Mandarin orange slices, pitted cherries (or maraschino), blueberries, or red grapes.
