Green Goddess Cabbage Salad

Chopped salads have become more popular lately, often served in a bowl with your choice of dressing. For this quick and easy chopped salad, finely-sliced cabbage is combined with ripe avocado, cucumbers, and a vibrant and herbaceous green dressing.
The following recipe provides roughly four servings.

Ingredients

  • 2 Tbsp sweet onion (finely minced)
  • Zest of 1 lime
  • Juice of 1 lime
  • 1 cup spinach
  • ¼ cup mayonnaise
  • ¼ cup sour cream
  • ¼ cup fresh chives
  • ½ tsp Kosher salt (or more to taste)
  • 2 green onions (finely sliced)
  • ¼ green cabbage (finely sliced)
  • 1 avocado (medium dice)
  • 1 cucumber (peeled and cut medium dice)
  • 2 cups pea greens
  • 2 Tablespoons hemp seeds (as garnish)
  • A few grinds of fresh black pepper

Instructions 

  • Mince the sweet onion, and set in a bowl with the lime zest and lime juice.
  • In a high-speed blender, mix the spinach, mayonnaise, sour cream, chives, and Kosher salt.
  • Taste the contents, and add more Kosher salt, if desired.
  • When you are ready to assemble your salad, combine the sliced green onion, cabbage, avocado, cucumber, and pea greens in a large mixing bowl.
  • Add the dressing from earlier, along with the onions and lime juice.
  • Mix until the contents are evenly combined.
  • Serve the salads in bowls, garnished with some hemp seeds and a few grinds of fresh black pepper.

Notes

The individual salad components can be prepped and chopped up in advance, including the dressing. Add the dressing right before serving.
