Using a sharp chef’s knife, cut off the top and bottom of the pineapple.
Slice off all the rind, getting rid of brown spots. This is easier with a smaller knife.
Cut out the core
Make long slices of pineapple (like jerky) about ¼” thick.
Place the slices on a parchment-covered tray.
Lay the pineapple on top and sprinkle with spices on both sides.
Lay the slices on the dehydrator tray. Make sure they don’t touch.
Dehydrate at 125 F for 12 hours. It may need time if you got a really juicy pineapple.
It’s ready to eat now.
Refrigerate. They will be good for up to a year. If you freeze them in a food storage bag, they last for 18 months.
