Meatloaf is among the great comfort foods of all time. But the meat does not always have to be ground beef. What about chicken instead? This recipe is easy and tastes in many ways like classic meatloaf your mom made (hopefully, she was a good cook). It has vibrant flavors and a moist texture, thanks to bread crumbs and eggs.
