Sweet, smoky salmon turns a simple grain bowl into an exciting weeknight meal.
- 4 salmon fillets
- 2 tablespoons honey
- 1 tablespoon lime juice
- 1 teaspoon chipotle powder or smoked paprika
- 1 tablespoon olive oil
- 3 cups cooked rice or quinoa
- 1 can black beans (rinsed and warmed)
- 1 cup corn kernels
- 1 avocado (sliced)
- 1 cup shredded cabbage
- Fresh cilantro and lime wedges
- Salt and pepper to taste
Whisk honey, lime juice, chipotle powder, olive oil, salt, and pepper in a small bowl. Place the salmon on a lined baking sheet and brush generously with the glaze. Bake until the salmon flakes easily with a fork. For a caramelized finish, broil briefly while watching closely.
Build each bowl with a layer of rice or quinoa. Add black beans, corn, cabbage, and avocado. Place the glazed salmon on top and drizzle any remaining pan juices over the bowl. Add cilantro and a squeeze of fresh lime.
