Ingredients
1 ½cupscooked chicken cut in bite-size morsels
1 ½tspExtra Virgin Olive Oil
1 ½tspButter
1medium white onion, minced and diced
2Carrots,(sliced thinly or diced)
2stalks of celery chopped
1Fresh lemon,( zested and juiced)
6cupschicken bone broth
Sea Salt & Cracked pepper, fresh ground to taste
Instructions
Prepare your chicken
Warm the olive oil and butter in a frying pan
Saute the vegetables until tender (about 3 minutes)
Put the chicken stock into a soup pot with the bone broth
Add the chicken and vegetables along with the lemon zest
