Lemony Chicken Soup 211

Chicken soup is wonderful for what ails you. Add bright, zesty lemon and it becomes a treat for your taste buds. You will find this recipe simple and straightforward. Change it a bit by adding various vegetables and spices you like.
The strength of this dish is that it’s nearly effortless. It’s really hard to mess this recipe up!
You don’t need a lot of fanfare, but you can adapt this soup. Add a mixture of vegetables like cherry tomatoes and broccoli. For spices, there’s garlic, ginger, and basil. For a thicker soup, try orzo.

Ingredients

  • 1 ½ cups cooked chicken cut in bite-size morsels
  • 1 ½ tsp Extra Virgin Olive Oil
  • 1 ½ tsp Butter
  • 1 medium white onion, minced and diced
  • 2 Carrots, (sliced thinly or diced)
  • 2 stalks of celery chopped
  • 1 Fresh lemon, ( zested and juiced)
  • 6 cups chicken bone broth
  • Sea Salt & Cracked pepper, fresh ground to taste

Instructions 

  • Prepare your chicken
  • Warm the olive oil and butter in a frying pan
  • Saute the vegetables until tender (about 3 minutes)
  • Put the chicken stock into a soup pot with the bone broth
  • Add the chicken and vegetables along with the lemon zest
  • Simmer, letting the soup reduce a bit.
