Lettuce, Tomato, and Onion Salad with Burrata Cheese and Fresh Herbs

Burrata is a soft cheese made from Italian cow’s milk (or sometimes Buffalo milk), where the inside of the cheese balls has a runny and creamy consistency. I made this salad last night, and went back to the supermarket today to buy some more burrata—it’s just a treat to serve this to yourself and your family at home.

Ingredients

  • 4 cups romaine lettuce (cut into bite-sized pieces)
  • 4 Roma tomatoes (large dice)
  • ¼ red onion (sliced finely)
  • 2 Tbsp balsamic vinegar
  • 2 Tbsp olive oil
  • A small pinch of Kosher salt
  • A few grinds of fresh black pepper
  • 4 balls of burrata cheese
  • 10 mint leaves (finely sliced)
  • 6 basil leaves (finely sliced)
  • 12 chives (finely sliced)

Instructions 

  • Cut the romaine lettuce, and wash and dry the leaves.
  • In a large salad mixing bowl, combine the lettuce leaves, diced tomatoes, sliced red onion, balsamic vinegar, and olive oil.
  • Add Kosher salt and a few grinds of pepper, and mix the vegetables together well.
  • Divide the contents into salad bowls, and top each bowl with a burrata cheese ball.
  • Sprinkle the sliced herbs over the salads, and enjoy.

Notes

Feel free to add whatever herbs or vegetables you want to this salad.
