Lettuce, Tomato, and Onion Salad with Burrata Cheese and Fresh Herbs
Burrata is a soft cheese made from Italian cow’s milk (or sometimes Buffalo milk), where the inside of the cheese balls has a runny and creamy consistency. I made this salad last night, and went back to the supermarket today to buy some more burrata—it’s just a treat to serve this to yourself and your family at home.
Ingredients
4cupsromaine lettuce(cut into bite-sized pieces)
4Roma tomatoes(large dice)
¼red onion(sliced finely)
2Tbspbalsamic vinegar
2Tbspolive oil
A small pinch of Kosher salt
A few grinds of fresh black pepper
4balls of burrata cheese
10mint leaves(finely sliced)
6basil leaves(finely sliced)
12chives(finely sliced)
Instructions
Cut the romaine lettuce, and wash and dry the leaves.
In a large salad mixing bowl, combine the lettuce leaves, diced tomatoes, sliced red onion, balsamic vinegar, and olive oil.
Add Kosher salt and a few grinds of pepper, and mix the vegetables together well.
Divide the contents into salad bowls, and top each bowl with a burrata cheese ball.
Sprinkle the sliced herbs over the salads, and enjoy.
Notes
Feel free to add whatever herbs or vegetables you want to this salad.
