The classic Waldorf salad has been around since the late 19 th century.In more recent recipes, items like toasted walnuts have been added, although theoriginal recipe omitted these.This loaded Waldorf salad recipe includes shredded Iceberg lettuce, fresh apples,halved grapes, toasted walnuts, and pickled cranberries. It’s worth making at home,even if you don’t have any expected guests.The following recipe serves 4 people.
Ingredients
¼cupapple cider vinegar
¼cupwater
3Tablespoonshoney
2teaspoonsKosher salt
16dried cranberries
½cupred seedless grapes(cut in half)
2Honeycrisp apples(peeled, cored and cut into quarters and finely-sliced)
1stalk celery(cut small dice)
3Tablespoonsprepared mayonnaise
2TablespoonsGreek yogurt
2teaspoonshoney
½cupwalnuts(toasted and roughly chopped)
2.5cupsvery finely-shredded Iceberg lettuce
A few grinds of fresh black pepper(and a sprinkle of Kosher salt)
Instructions
Combine the apple cider vinegar, water, honey, and Kosher salt.
Bring the contents up to a simmer, and stir to dissolve the honey
Remove the liquid from the heat, and add the dried cranberries.
Allow the dried cranberries to sit in the liquid for roughly five minutes, and then add the halved seedless grapes.
Set the cranberries and grapes aside for when you are ready to assemble your salad.
In a medium-sized mixing bowl, mix together the sliced apple with the diced celery, mayonnaise, Greek yogurt, and honey.
Stir until combined.
Finely slice the Iceberg lettuce, and arrange the lettuce at the bottom of the serving bowls.
Top the lettuce with the prepared apple and celery mixture that you made earlier.
Drain the cranberries and grapes from the liquid they were sitting in.
Top the salad with the chopped walnuts, drained cranberries and halved grapes.
Top with a few grinds of fresh black pepper.
