Old-School Nachos

I heard that the original nachos came from Piedras Negras, Mexico around the year 1940, where the dish was served as a mixture of tortilla chips, cheese, and pickled Jalapenos.
This recipe will get you close to that original flavor, in the comfort of your own home. I also included some freshly-squeezed lime juice on top.

Ingredients

  • 12 oz 1 bag corn tortilla chips
  • 4 cups Colby cheese (shredded)
  • 1.5 cups pickled Jalapenos
  • Juice of ½ lime

Instructions 

  • Preheat your oven to 400˚F.
  • Arrange layers of the tortilla chips, shredded cheese, and pickled Jalapenos on an oven-safe platter.
  • Bake at 400˚F for 8-10 minutes, or until the cheese is fully melted.
  • Serve hot, with a squeeze of fresh lime juice on top.

Notes

These are best eaten fresh—they are less tasty when served cold.
