Juicy peaches bubble under a buttery oat topping for a simple dessert that tastes like summer comfort. 

Ingredients

  • 6 ripe peaches (sliced)
  • 2 tablespoons granulated sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch
  • ¾ cup rolled oats
  • ½ cup all-purpose flour
  • ½ cup brown sugar
  • ½ teaspoon cinnamon
  • ¼ teaspoon salt
  • 6 tablespoons cold butter (cubed)
  • Vanilla ice cream (for serving)

Instructions 

  • Heat the oven to 375°F. Toss peaches with granulated sugar, lemon juice, and cornstarch in a baking dish.
  • In a bowl, mix oats, flour, brown sugar, cinnamon, and salt. Cut in cold butter with your fingers or a pastry cutter until crumbly.
  • Scatter topping evenly over the peaches.
  • Bake until the fruit is bubbling and the topping is golden brown. Let cool for a few minutes before serving.
  • Spoon into bowls and add vanilla ice cream while the crisp is still warm.
