Shrimp Quesadilla Recipe - The Perfect Weeknight Meal
Shrimp quesadillas are one of the best weeknight meals because they’re super easy to make and everyone can customize their plate to their liking! Try adding guacamole, salsa, beans, and corn so each person can have a great quesadilla with ingredients they love! This shrimp quesadilla recipe will become your new go-to!
Ingredients
2tablespoonsolive oil
cooking spray
1/2mediumonion(diced)
1red bell pepper(seeded and chopped)
3clovesgarlic(minced)
4cupsshrimp(peeled and deveined)
2tablespoonstaco seasoning
6-8tortillas(flour or corn, depending on your preference)
1-2cupsshredded cheese(Mexican blend or cheddar)
2tablespoonsfreshly chopped cilantro(for garnish)
Instructions
Heat your skillet on medium-high heat and add olive oil. Sautee your onions and garlic for a couple of minutes until soft and translucent. Add bell peppers and cook an additional 2 minutes.
Next, add your shrimp and season with taco seasoning.
Cook for about 4-5 minutes until pink!
Remove shrimp mixture and set aside. Clean your pan and spray with cooking spray.
Place tortilla on pan, over medium-low heat, add cheese and shrimp mixture. Be sure not to add too much or your quesadilla or it will fall apart!
After 2-3 minutes, fold the tortilla in half. Flip and let each side get golden brown.
Repeat for remaining tortillas.
Garnish with fresh cilantro.
