Summer Strawberry Daiquiri

There are a few classic drinks I rely on to beat the summer heat. One of my favorites is a classic summer strawberry daiquiri, made with a bunch of fresh strawberries, half of which are frozen the day before making this beverage.
This following recipe is for 2-3 large drinks.

Ingredients

  • 16 oz (1 lb) of fresh strawberries, hulls removed
  • 4 oz rum
  • Juice from ½ lime
  • 1 oz simple syrup

Instructions 

  • Freeze half of the strawberries the day before you plan to make this cocktail.
    In a blender, add the fresh and frozen strawberries, and blend until you have a puree.
  • *Reserve a few strawberries as a garnish.
  • Pass the puree through a strainer or chinois to get rid of the majority of the seeds.
  • Return the mixture to the blender, and add the remaining ingredients.
  • Blend until smooth.
  • Serve immediately, in chilled glasses, and garnish with a strawberry.

Notes

Freezing half of your strawberries and using those instead of ice helps ensure your drinks aren’t too watered down.
