There are a few classic drinks I rely on to beat the summer heat. One of my favorites is a classic summer strawberry daiquiri, made with a bunch of fresh strawberries, half of which are frozen the day before making this beverage.This following recipe is for 2-3 large drinks.
Ingredients
16 oz (1 lb) of fresh strawberries, hulls removed
4 oz rum
Juice from ½ lime
1 oz simple syrup
Instructions
Freeze half of the strawberries the day before you plan to make this cocktail. In a blender, add the fresh and frozen strawberries, and blend until you have a puree.
*Reserve a few strawberries as a garnish.
Pass the puree through a strainer or chinois to get rid of the majority of the seeds.
Return the mixture to the blender, and add the remaining ingredients.
Blend until smooth.
Serve immediately, in chilled glasses, and garnish with a strawberry.
Notes
Freezing half of your strawberries and using those instead of ice helps ensure your drinks aren’t too watered down.
