There’s no question that smoked pork is delicious. But if you’re looking to buy a pork shoulder, it’s BIG, like 18 pounds BIG (feeding minions!). Your butcher can cut it back for you, but nonetheless, you’ll want to think about more than one way to use your meat.
- 8 lb pork shoulder
- Apple cider vinegar
- Pineapple juice
- Dry rub of your choice
- Binder of your choice
- Pineapple salsa
Remove the plastic from the pork shoulder.
Make sure your smoker reads 225F
Use a small disposable pan filled with water on the grate below the meat
Put the pork shoulder central on the grates.
Mix equal quantities of apple cider vinegar and pineapple juice together (this is your spritzer).
Smoke for four hours.
Spritz the meat once an hour
Remove the shoulder from the smoker
Spray it again
Secure it in aluminum foil
Smoke for four more hours.
When your meat reaches 200, it’s done.
Let the pork shoulder rest for a half hour.
Cut up as required for your recipe(s)
Serve with a side of pineapple salsa
