This cucumber salad side dish goes great as a spicy accompaniment to grilled or roasted chicken or fish.
Ingredients
1jalapeno pepper(seeds included, finely minced)
2largecucumbers(peeled and seeds removed, cut in 1/8” slices)
¼clove garlic(finely minced)
1/8tspground cayenne pepper
½cupGreek yogurt
Zest of 1 lemon
Juice of 1 lemon
½cupfresh dill(chopped)
2tbsppoppy seeds(toasted)
2tbspblack sesame seeds(toasted)
Instructions
To remove the seeds on the cucumber, cut the peeled cucumber in half lengthwise
Use a spoon to scrape out the seeds from the center of each half.
Cut each half into 1/8” slices
Season slices with salt and mix gently in a bowl
Allow to rest for 20 minutes.
Drain out excess water after 20 minutes.
Allow the minced garlic to sit with the lemon juice and lemon zest for 10 minutes.
Combine the salted cucumber with the minced jalapeno, cayenne pepper, Greek yogurt, minced garlic, lemon zest and lemon juice, fresh dill, and toasted poppy seeds.
Garnish each serving with toasted black sesame seeds.
Notes
The heat level can be augmented based on your desired spice level.
