Spinach and Onion Dip
Ingredients
One quarter cup olive oil
1
large onion
(chopped)
One quarter cup shallots
(chopped)
One half pound baby spinach
(chopped)

package cream cheese
(softened)
1
and one half cups sour cream
1
clove
garlic
(minced)
Salt and pepper to taste
Instructions
Heat olive oil in a skillet and saute onion and shallots, add spinach and cook for several minutes.
Place Spinach mixture in a glass bowl and stir in cream cheese, sour cream, garlic, and salt and pepper.
Chill and serve with fresh vegetables, crackers, and/ or bread pieces.
Notes
Use low fat cream cheese and sour cream
