Spinach and Onion Dip

Ingredients

  • One quarter cup olive oil
  • 1 large onion (chopped)
  • One quarter cup shallots (chopped)
  • One half pound baby spinach (chopped)
  • 1 8 -oz. package cream cheese (softened)
  • 1 and one half cups sour cream
  • 1 clove garlic (minced)
  • Salt and pepper to taste

Instructions 

  • Heat olive oil in a skillet and saute onion and shallots, add spinach and cook for several minutes.
  • Place Spinach mixture in a glass bowl and stir in cream cheese, sour cream, garlic, and salt and pepper.
  • Chill and serve with fresh vegetables, crackers, and/ or bread pieces.

Notes

Use low fat cream cheese and sour cream
