Veggie Burger with Red Onion, Pickles, and Creamy Dressing

Ingredients

  • 1 can black beans (drained and rinsed)
  • ½ cup rolled oats
  • ½ cup breadcrumbs
  • ½ small onion (finely chopped)
  • 1 small carrot (grated)
  • 1 egg or flax egg
  • 1 teaspoon cumin
  • ½ teaspoon smoked paprika
  • Salt and black pepper (to taste)
  • 2 tablespoons oil
  • 4 burger buns
  • Red onion slices
  • Dill pickle slices
  • Lettuce and tomato slices

For the Dressing

  • ¼ cup mayonnaise or Greek yogurt
  • 1 tablespoon ketchup
  • 1 teaspoon mustard
  • 1 teaspoon pickle brine

Instructions 

  • Mash the black beans in a bowl, leaving some texture. Mix in oats, breadcrumbs, onion, carrot, egg, cumin, paprika, salt, and pepper. Shape the mixture into four patties and refrigerate for 15 minutes. Heat oil in a skillet over medium heat and cook the patties for 4 to 5 minutes per side until golden. Mix the dressing ingredients in a small bowl. Toast the buns, then assemble each burger with lettuce, veggie patty, red onion, pickles, tomato, and dressing. Serve with baked fries, coleslaw, or a fresh green salad. Add jalapeños or hot sauce for a spicy version.
