Weeknight Taco Salads

Most people love tacos, but have you ever tried a taco salad? It is basically a deconstructed taco over a bed of lettuce. You can mix and match toppings to your liking! We are confident you will keep coming back to this recipe, let's get to it!

Ingredients

  • 1 package Ground meat of choice (chicken, turkey, or bee)
  • 1/2 package of taco seasoning
  • romaine or iceberg lettuce, chopped (enough to fill each person's bowl)
  • 2 cups of chopped cherry tomatoes
  • 1 cup of shredded cheddar cheese
  • 1-2 avocados (or guacamole)
  • 1 chopped bell pepper
  • 1 chopped small white onion
  • 1 can black beans (rinsed)
  • 1 can of sweet corn (rinsed)
  • sour cream (for topping)
  • salsa (for topping)

Instructions 

  • Cook your ground meat, with taco seasoning, until cooked through. Remove from heat and set aside.
  • Cook your chopped bell pepper and white onion in oil until tender.
  • Assemble your taco bowl, with the lettuce as the base. Add in all of the ingredients and mix well. Top your salad with sour cream and salsa.
  • Enjoy!
