- This salad includes greens such as arugula, radicchio, and endive as bitter components. Honey, Feta cheese, toasted walnuts, cherry tomatoes, fresh orange slices, and sherry vinegar provide sweetness, richness, and acidity to balance out the bitterness from the greens.

Bitter Greens Salad with Honey, Walnuts, Cherry Tomatoes & Feta Cheese
Ingredients
- 1 head of endive lettuce
- ½ head of radicchio lettuce
- 2 cups of arugula
- 2 cups of baby spinach
- 1 cup of cherry tomatoes, cut in half and lightly salted
- ¼ red onion, cut into small slices
- 3 Tbsp sherry vinegar
- 2 Tbsp honey
- 1 tsp Dijon mustard
- ¼ cup extra virgin olive oil
- Kosher salt & freshly-ground black pepper, to taste
- ¼ cup dried cranberries, soaked in hot water for 10 minutes and drained
- ½ cup Feta cheese
- ½ cup walnuts
- 1 whole orange, peeled and broken into slices
Instructions
- Wash and dry endive, radicchio, arugula, baby spinach and cherry tomatoes.
- Cut endive and radicchio into small strips and place into a large bowl.
- Add arugula and baby spinach to the bowl.
- Cut cherry tomatoes into halves and season lightly with kosher salt.
- Place the halved and salted cherry tomatoes in a small bowl and allow them to drain their water for 15 minutes while you prepare the remainder of the salad ingredients.
- Add the sliced red onion to a small bowl with the sherry vinegar, Dijon mustard, honey, and olive oil.
- Season with kosher salt & freshly-ground black pepper.
- Soak the dried cranberries in hot water for ten minutes.
- Drain the soaked cranberries and set aside for salad assembly.
- Lightly toast the walnuts and set them aside.
- Break the feta cheese into large crumbles and set them aside.
- Toss the onions that you soaked earlier in the vinaigrette with the salad greens.
- Season the greens with a pinch of kosher salt & freshly-ground black pepper.
- Drain the water from the cherry tomatoes that you salted earlier.
- Add the cherry tomatoes, cranberries, walnuts, Feta cheese, and orange slices.
- Drizzle some additional olive oil over the top of the salad.
- Serve salad immediately.
