Fiery Deviled Eggs
Ingredients
- 2 small jalapeno peppers, finely minced
- 12 whole eggs, hard boiled
- 3 Tbsp mayonnaise
- 1/4 cup Dijon mustard
- 2 Tbsp extra virgin olive oil
- 3 Tbsp softened butter
- 1 tsp lemon juice
- 1 tsp original Tabasco sauce
- 3 freshly chopped chives
- ½ tsp ground cayenne pepper
- Kosher salt & freshly ground black pepper
Instructions
- Hard boil eggs and leave in ice water.
- Peel eggs in ice water and rinse off any extra pieces of shell.
- Cut in boiled eggs in half and carefully remove the cooked yolks from the cooked whites.
- Reserve egg white halves for later while you prepare the filling.
- For the filling, mix the egg yolks with the jalapenos peppers, mayonnaise, Dijon mustard, olive oil, softened butter, lemon juice, 2 Tbsp chopped chives, and Tabasco sauce.
- You can blend this egg yolks mixture in a food processor if you want a creamier end result with less texture.
- Taste the mixture and adjust seasoning with salt and freshly-ground black pepper.
- Place the contents into a plastic piping bag.
- Pipe the filling carefully into the center of the egg whites.
- Sprinkle cayenne powder over the top of the filling. Sprinkle with remaining freshly chopped chives and serve.
