Fruity Noodle Salad
Ingredients
- 1 cup uncooked rotini or bow-tie pasta
- 1 cup fresh strawberries quartered
- 1 cup pineapple tidbits
- 1 cup seedless green grapes (halved)
- 1 cup cubed watermelon (or cantaloup)
- 1 cup blackberries (or raspberries)
- 2 kiwi fruit (peeled and sliced into bite-size pieces)
- 2 tbsp slivered almonds (toasted)
INGREDIENTS: DRESSING
- 1 cup vanilla yogurt (or flavored)
- ½ tsp grated lime peel
- 1 tbsp lime juice
- 2 tbsp orange flower honey
- ⅔ cup fresh orange juice
- ⅓ cup packed brown sugar
- 1 teaspoon vanilla extract
Instructions
- Using the directions on the container, cook the rotini to just over al dente, drain, and rinse with cold water.
- Use a strainer to let the water drip out of the rotini.
- Put the pasta and all the fruit in a large serving container
- Use a small bowl to mix the dressing together
- Toss the fruit with the dressing until evenly coated.
- Let chill for at least 30 minutes before serving.
