Chopped salads have become more popular lately, often served in a bowl with your choice of dressing. For this quick and easy chopped salad, finely-sliced cabbage is combined with ripe avocado, cucumbers, and a vibrant and herbaceous green dressing.
The following recipe provides roughly four servings.
Green Goddess Cabbage Salad
Ingredients
- 2 Tbsp sweet onion (finely minced)
- Zest of 1 lime
- Juice of 1 lime
- 1 cup spinach
- ¼ cup mayonnaise
- ¼ cup sour cream
- ¼ cup fresh chives
- ½ tsp Kosher salt (or more to taste)
- 2 green onions (finely sliced)
- ¼ green cabbage (finely sliced)
- 1 avocado (medium dice)
- 1 cucumber (peeled and cut medium dice)
- 2 cups pea greens
- 2 Tablespoons hemp seeds (as garnish)
- A few grinds of fresh black pepper
Instructions
- Mince the sweet onion, and set in a bowl with the lime zest and lime juice.
- In a high-speed blender, mix the spinach, mayonnaise, sour cream, chives, and Kosher salt.
- Taste the contents, and add more Kosher salt, if desired.
- When you are ready to assemble your salad, combine the sliced green onion, cabbage, avocado, cucumber, and pea greens in a large mixing bowl.
- Add the dressing from earlier, along with the onions and lime juice.
- Mix until the contents are evenly combined.
- Serve the salads in bowls, garnished with some hemp seeds and a few grinds of fresh black pepper.
