Sassy Pineapple Smoked Pork Shouder
Ingredients
- 8 lb pork shoulder
- Apple cider vinegar
- Pineapple juice
- Dry rub of your choice
- Binder of your choice
- Pineapple salsa
Instructions
- Remove the plastic from the pork shoulder.
- Make sure your smoker reads 225F
- Use a small disposable pan filled with water on the grate below the meat
- Put the pork shoulder central on the grates.
- Mix equal quantities of apple cider vinegar and pineapple juice together (this is your spritzer).
- Smoke for four hours.
- Spritz the meat once an hour
- Remove the shoulder from the smoker
- Spray it again
- Secure it in aluminum foil
- Smoke for four more hours.
- When your meat reaches 200, it’s done.
- Let the pork shoulder rest for a half hour.
- Cut up as required for your recipe(s)
- Serve with a side of pineapple salsa
