Most people love tacos, but have you ever tried a taco salad? It is basically a deconstructed taco over a bed of lettuce. You can mix and match toppings to your liking! We are confident you will keep coming back to this recipe, let’s get to it!
Weeknight Taco Salads
Ingredients
- 1 package Ground meat of choice (chicken, turkey, or bee)
- 1/2 package of taco seasoning
- romaine or iceberg lettuce, chopped (enough to fill each person's bowl)
- 2 cups of chopped cherry tomatoes
- 1 cup of shredded cheddar cheese
- 1-2 avocados (or guacamole)
- 1 chopped bell pepper
- 1 chopped small white onion
- 1 can black beans (rinsed)
- 1 can of sweet corn (rinsed)
- sour cream (for topping)
- salsa (for topping)
Instructions
- Cook your ground meat, with taco seasoning, until cooked through. Remove from heat and set aside.
- Cook your chopped bell pepper and white onion in oil until tender.
- Assemble your taco bowl, with the lettuce as the base. Add in all of the ingredients and mix well. Top your salad with sour cream and salsa.
