Ingredients
- 1 ½ cups cooked chicken cut in bite-size morsels
- 1 ½ tsp Extra Virgin Olive Oil
- 1 ½ tsp Butter
- 1 medium white onion, minced and diced
- 2 Carrots, (sliced thinly or diced)
- 2 stalks of celery chopped
- 1 Fresh lemon, ( zested and juiced)
- 6 cups chicken bone broth
- Sea Salt & Cracked pepper, fresh ground to taste
Instructions
- Prepare your chicken
- Warm the olive oil and butter in a frying pan
- Saute the vegetables until tender (about 3 minutes)
- Put the chicken stock into a soup pot with the bone broth
- Add the chicken and vegetables along with the lemon zest
- Simmer, letting the soup reduce a bit.
