This easy vegetarian dinner combines savory mushrooms, tender orzo, and Parmesan in one comforting pan.
- 2 tablespoons olive oil
- 12 ounces cremini mushrooms (sliced)
- 1 small onion (finely chopped)
- 3 garlic cloves (minced)
- 1½ cups orzo
- 3½ cups vegetable stock
- ½ cup heavy cream
- ½ cup grated Parmesan
- 2 cups baby spinach
- 1 teaspoon fresh thyme leaves
- Salt (black pepper, and lemon zest)
Heat olive oil in a wide pot. Cook mushrooms until browned, then season with salt and pepper.
Add onion and cook until soft. Stir in garlic and thyme, then add orzo.
Pour in stock and bring to a gentle simmer. Cook, stirring often, until the orzo is tender and most of the liquid is absorbed.
Stir in cream, Parmesan, spinach, and a little lemon zest. Cook just until the spinach wilts.
Taste and adjust seasoning before serving.
