
Cool Lemon Bars
Ingredients
- 2 cups all-purpose flour
- 1/2 cup powdered sugar
- 1 butter, (softened)
- 4 eggs beaten
- 2 cups sugar
- 1/4 cup lemon juice
- 1/4 cup flour
- 1 tsp. baking powder
- Additional powdered sugar
Instructions
- Combine flour and powdered sugar; add butter and mix until crumbly
- Press into a greased 13 x 9 inch pan
- Bake for 20 minutes at 350 degrees until lightly browned
- Combine eggs, sugar, and lemon juice
- Stir in flour and baking powder
- Pour over cooked crust and bake for 25 - 30 minutes at 350 degrees
- Allow to cool and dust with powdered sugar and cut into squares
