- 1 tablespoon olive oil
- 1 small yellow onion (diced)
- 1 red bell pepper (diced)
- 2 cloves garlic (minced)
- 1 can (15 oz black beans, drained and rinsed)
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- ½ teaspoon smoked paprika
- Salt and black pepper (to taste)
- 8 small corn or flour tortillas
- 1 avocado (sliced)
- 1 cup shredded lettuce
- ½ cup salsa
- Lime wedges and chopped cilantro (optional)
Heat olive oil in a skillet over medium heat. Add onion and bell pepper; cook for 5–6 minutes until softened.
