Ingredients

  • ½ tsp baking powder
  • ½ tsp Kosher salt
  • 1 cup all-purpose flour
  • ½ cup unsweetened cocoa powder
  • 3.5 oz. semi-sweet chopped chocolate
  • 2 Tbsp oil
  • 12 Tbsp (1.5 sticks) salted butter
  • 1 tsp espresso powder
  • 1/3 cup brown sugar
  • 2 whole eggs
  • 1 egg yolk
  • 1 Tbsp vanilla extract
  • 1 cup chocolate chips

Instructions 

  • Preheat the oven to 325F.
  • Grab your 10" oven-safe pan or skillet and give it a light coating of non-stick baking spray or softened butter.
  • In a bowl, mix together the baking powder, kosher salt, flour, and cocoa powder.
  • Set this dry ingredient mixture aside for now; it will come into play later.
  • Now, it's time to deal with the chocolatey goodness.
  • Combine the chopped chocolate, oil, and butter in a small sauce pot.
  • Melt everything together slowly over medium-low heat on the stove, stirring until the ingredients are incorporated and the chocolate has fully melted.
  • Once the wet mixture is all melted and velvety-smooth, add the espresso powder and stir to combine.
  • Set this mixture aside for later.
  • In another bowl, combine the sugars, whole eggs, egg yolk, and vanilla extract.
  • Stir for about 30 seconds, or until the ingredients are fully combined.
  • Now, slowly, and gently incorporate the warm butter and chocolate mixture into the egg mixture, whisking continuously.
  • Now, it is time to bring it all together.
  • Using a rubber spatula, give a slow and gentle stir to the chocolate chips and dry ingredients until they are just barely incorporated.
  • Be careful not to overmix at this stage, as it can lead to dry and over-mixed brownies.
  • Once your batter is ready, scrape it into the prepared skillet, smoothing the top out so that the brownies bake evenly.
  • Bake at 325F for roughly 26-30 minutes.
  • Watch for the top to become slightly cracked and shiny, with firm edges, and insert a toothpick into the center of the brownies to test for doneness.
  • *I like to have the insides be a bit soft, and not fully-baked, but this is up to you. If you prefer your brownies to be a bit drier and more fully-baked on the insides, insert a toothpick in the center of the brownies and wait for the toothpick to come out clean without any batter sticking to it when you pull it out.
  • Once done, give everybody a spoon and serve people right from the skillet, with French vanilla ice cream on the side.

Notes

You can always reheat the brownies in a microwave-safe container for about 15-20 seconds to enjoy them warm the following day.
