
Ingredients
- 1 egg
- 2 cups biscuit mix
- 1/3 cup sugar
- 2/3 cup milk
- 2 tsp. grated lemon zest
- 1 and 1/2 cups frozen blueberries, thawed, rinsed and drained
- 2/3 cup confectioner's sugar
- 1 Tbsp. fresh lemon juice
Instructions
- Combine egg, biscuit mix, sugar, milk and lemon zest and mix well
- Gently fold in blueberries
- Pour into a lightly greased 9-inch round pan
- Bake at 400 degrees for 20 - 25 minutes
- Combine confectioner's sugar and lemon juice to make glaze
- Drizzle over cake before serving
