Meatloaf is among the great comfort foods of all time. But the meat does not always have to be ground beef. What about chicken instead?
This recipe is easy and tastes in many ways like classic meatloaf your mom made (hopefully, she was a good cook). It has vibrant flavors and a moist texture, thanks to bread crumbs and eggs. And, of course, you need some type of tomato-based glaze for the top.
Homey Chicken Meatloaf
Ingredients
- 1 lb ground chicken
- 1 c whole milk
- 1 c Italian bread crumbs
- 2 pieces celery (chopped)
- 1 small Spanish onion (chopped)
- 2 large eggs
- 3 cloves smashed garlic
- ¾ c grated parmesan
- ¼ c ketchup or barbecue sauce
- ¼ cup brown sugar
- 3 tbsp Worcestershire sauce
- 2 tsp parsley
- 2 tsp mixed garlic and onion powder
- 2 tsp kosher salt
- 1 tsp fresh ground pepper
Instructions
- Prepare a baking sheet with parchment paper
- Set your oven to 350F
- Mix the ketchup and brown sugar together for the glaze.
- Beat the eggs in a large mixing bowl.
- Add the milk, cheese, breadcrumbs, onions, Worcestershire sauce, parsley, onion powder, garlic powder, salt, and pepper.
- Mix, making sure the ingredients are well-integrated
- Break up the ground chicken into ½ handfuls and add them to the bowl.
- Work the chicken into the wet mixture
- You want the chicken evenly distributed; after that, stop mixing
- Move the chicken mixture to your baking pan
- Place it in the center and form it into an evenly proportioned-loaf
- Top the loaf with the glaze
- Cook for 50 minutes.
- Turn on your broil. Give it 5 minutes to caramelize
- Your meatloaf is done when the internal temperature is 165F.
- Rest for 10 minutes before serving
