Easy Vegetarian Black Bean Tacos

Looking for a quick, flavorful meat-free dinner? These vegetarian black bean tacos are budget-friendly, ready in about 25 minutes, and perfect for busy weeknights in the USA. Creamy black beans, colorful vegetables, and fresh toppings make every bite satisfying. 

Ingredients

  • 1 tablespoon olive oil
  • 1 small yellow onion (diced)
  • 1 red bell pepper (diced)
  • 2 cloves garlic (minced)
  • 1 can (15 oz black beans, drained and rinsed)
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • ½ teaspoon smoked paprika
  • Salt and black pepper (to taste)
  • 8 small corn or flour tortillas
  • 1 avocado (sliced)
  • 1 cup shredded lettuce
  • ½ cup salsa
  • Lime wedges and chopped cilantro (optional)

Instructions 

  • Heat olive oil in a skillet over medium heat. Add onion and bell pepper; cook for 5–6 minutes until softened.
  • Add garlic, cumin, chili powder, and smoked paprika. Stir for 30 seconds.
  • Add black beans and 2 tablespoons of water. Cook for 4–5 minutes, gently mashing some beans with a spoon. Season with salt and pepper.
  • Warm tortillas in a dry skillet or microwave.
  • Fill each tortilla with the black bean mixture, lettuce, avocado, salsa, and any optional toppings. Serve with lime wedges.
