Barbecue Stuffed Bread
Ingredients
- ½ lb smoked bacon
- ½ cup poblano peppers
- 1 cup button mushrooms
- Baby spinach
- Baguette
- 1 lb ground beef
- Colby-Jack cheese
- Garlic barbecue rub
- White cheddar cheese
Instructions
- Prepare your charcoal, watching for ash covering the bricks.
- Dice the bacon.
- Fry the bacon until crispy. Set aside on paper towels to absorb grease.
- Sautee the peppers and chopped mushrooms.
- Mix in the baby spinach. It will wilt.
- Add the bacon back to the mix.
- Slice your baguette lengthwise.
- Pull out the bread in the center, hollowing out a space for your ingredients.
- Lay down the bacon mix along the bread evenly.
- Sprinkle with garlic barbecue rub.
- Top with ground beef, pressing it down as you go. Do not fill above the top edge of the bread.
- Sprinkle with more rub.
- Sear the ground beef on the charcoal grill.
- Turn the filled baguette over.
- Top it with white cheddar. Let the cheese melt.
- Serve with offerings of condiments like mustard, ketchup, and mayonnaise.
- Cut into 1-½ inch pieces before serving.
