Pearl Pudding

Have you ever had tapioca pudding? It’s a yummy classic dessert. The beauty of this pudding is that it isn’t heavy whatsoever. You can enjoy it after a hardy meal.

This recipe calls for pearl tapioca. They’re small but puff up when you cook them. Yet, it’s so creamy! If you don’t have a double boiler, you can still make the pudding. You just have to stir constantly so it doesn’t burn.

Fun idea: Add a little food coloring that suits the occasion.

Tapioca comes from the cassava root, which can also be made into flour. Because they are basically tasteless, they’ll take on whatever flavorings you wish. Tapioca is what you see in bubble tea.

Ingredients

  • 4 c whole milk
  • c medium pearl tapioca
  • 3 large eggs
  • ¾ c white sugar
  • 1 ½ tsp vanilla extract**
  • Pinch of salt
  • 2 c. whipped cream
  • ** Any extract will do (depending on your tastes. Ideas include mint, orange, almond, anise, and cinnamon.)

Instructions 

  • Soak the tapioca in water for 2 hours to soften them up
  • Put water into the bottom pan of the double boiler
  • Heat it up to boiling
  • Put the top pan on the double boiler and add milk to it.
  • Stir in the pearls
  • Cook them until they are clear, stirring periodically (about 50 minutes, possibly more)
  • In another bowl, whisk the eggs, sugar, salt, and flavoring. Make sure to get a good blend here.
  • Stir in a bit of the heated milk (this tempers the egg)
  • Slowly add the egg mixture to the tapioca
  • Now start stirring again.
